Rainbow Cake

Man! I can’t believe I never posted about this awesome cake! I found it online at Omnomicon, which is an awesome food blog. She posted this great recipe that was basically white cake mix, diet sprite (I KNOW!) and food coloring. That’s it. No eggs, no oil, no nothing. Just awesomeness :)

You can see the bowls in the background where I mixed the batter with all the colors. Dave (our “landlord”) licked three of them clean. He likes sugar apparently. :)

The finished product. Oh. My. Goodness. SO GOOD! She also gives a recipe for how to make icing, but I was lazy and just used the random Betty Crocker cheesecake icing that we had in the cupboard (which was also amazingly good).

Here is the original link to the cake. It was super simple and fun to make. I felt like I was five years old again, playing with all the colors. I’m planning on making rainbow cupcakes this weekend for my friends daughter’s birthday who is turning ONE!

    I forgot to tell you that those cupcakes were AWESOME!!! SO moist and yummy!

    I will have to steal that recipe next time I need to bring something to a party (I will check with you first just in case you decide to bring the same thing)!
